The device types and the iOS versions are the ones that Xcode on the hosted machine provides. Run this command to see them:
sim-remote simctl list devices available
A machine can have one pre-booted iPhone simulator, so the first boot of that device is fast. You can create more simulators with sim-remote simctl create.
